This is a perfect recipe for fall! Enjoy it as a side or a meal on it's own. It is filling, hearty & loaded with good nutrition.
Here's the recipe!
Pre-heat the oven to 375 degrees
Wash and cut about 8-10 brussel sprouts in halves
Peel and dice one large sweet potato
Add both the brussel sprouts & sweet potato to a bowl, then add the following seasonings: Salt/pepper to taste, dry ginger, & turmeric. Also add in a hand full of pine nuts & raw pumpkin seeds. Add 1 tbsp coconut oil or olive oil.
Mix everything well
Lay the coated sweet potatoes & brussel sprouts on a sheet pan layered with parchment paper, then roast for 15 minutes at 375 degrees.
Once the veggies are roasted to perfection, carefully remove from oven and garnish with some coconut flakes for that extra crunch & flavor.
