INSTRUCTIONS
Cook quinoa as per instructions on the packaging and set aside.
I usually like to toast my quinoa a little before cooking. You can make as much as you like. For this recipe, I cooked 1/2 cup.
Dice one medium/large sweet potato and cook on medium high in some avocado oil till soft.
You can keep stirring every 2 minutes until done and add a little water or broth to avoid sticking in pan and to speed up the cooking process for these.
Cut one whole sausage of your choice and add it to the pan with the sweet potatoes to just brown a little, then turn heat to medium low.
Add 3-4 cups of thoroughly washed baby spinach to the pan with the sweet potatoes and sausage.
Add salt as per taste
Add 1/2 tbsp of garlic powder and mix everything together on low heat for about 3-4 minutes.
I love garlic so I add a lot of this stuff. You can also add freshly chopped garlic.
Place the cooked quinoa in a bowl along with the cooked sweet potato mix and top with some sunflower seeds before serving as shown.
