Spicy Cauliflower Fried Rice With Tofu

Cauliflower rice are really in these days and people seem to be enjoying it a lot if you make it with the right flavors and ingredients. Here, I have a simple yet delicious recipe that will make you want to go for seconds. It’s super healthy and a perfect meal that can be whipped up in less then 20 minutes for lunch or dinner. Print this recipe below.




Ingredients

  1. 1 tbsp olive oil

  2. 1/2 block tofu cut into cubes

  3. salt to taste

  4. black pepper to taste

  5. 1/2 onion chopped

  6. 2-3 cloves garlic minced

  7. 1/2` tbsp ginger chopped

  8. 1 cup nixed veggies (green bean, peas, carrots, corn)

  9. 2 cups grated cauliflower

  10. 2 tbsp organic coconut aminos or soy sauce

  11. 1 tsp red chilli flakes

  12. 1 pinch chiniese five spice

  13. 1/4 cup fresh cilantro chopped

  14. Instructions

  15. Heat oil in a pan on medium heat and add tofu, salt & black pepper

  16. Stir fry the tofu until golden in color then set aside in a plate when done

  17. In the same pan, add onions, ginger and garlic and fry till golden brown in color

  18. Add veggies and stir fry for 5-7 minutes

  19. Add cauliflower rice and mix well

  20. Add coconut aminos, turmeric powder, and Chinese five spice, then mix well.

  21. cook for 3-4 minutes, then add fried tofu and mix gently

  22. Empty the fried rice in a bowl and garnish with fresh cilantro before serving
