Cheesy Vegan Pasta

This pasta will have you going for seconds because of the cheesy vegan sauce that it is folded in. It's so creamy and decadent, you will feel guilty eating it - yet it is guilt-free! The rich and creamy sauce is made from avocado.

Avocado is considered one of the BEST fats when it comes to the world of nutrition. It is rich in omega-3 fatty acids, which are know to improve joint health, heart health and lower cholesterol. Avocados are also anti-inflammatory & help lower the blood pressure. Normally, if you eat a pasta dish for lunch, you will feel lethargic and have low energy levels to continue your day - the reason for this is spiked up blood sugar. In this recipe, the avocado sauce does just the opposite, as avocados help to stabilize your blood sugar. They are also excellent for the eyes and a great source of antioxidants!

The noodles in this recipe are simply made of fresh raw zucchini, which has very similar health benefits to avocado. What I love most about this dish is that it is a perfect option for lunch on a hot summer day. It helps to stabilize blood sugar because of both avocados and zucchini. You will not have a hard time working or focusing after eating this dish. This recipe takes only 15 minutes to whip up! Here's what you need to make this yummy, creamy, delicious and guilt free 'CHEESY' pasta!


2 fresh and organic zucchinis

1 & 1/2 organic avocado

2-3 fresh basil leaves

1 tsp garlic powder

Salt to taste

1 tbsp olive oil

1/4 cup cashew milk (or any nut milk)

1/4 cup water to blend


  1. Use a veggetti (can find at Target or Walmart) to make the noodles from the zucchinis and set aside.

  2. Add all ingredients except for zucchini noodles to a blender and blend into a creamy sauce.

  3. Add the desired amount of sauce to the zucchini noodles and mix well till all the noodles are quoted with the sauce.

  4. Empty in a plate and sprinkle with "everything but the bagel seasoning blend" & crushed pepper flakes. ENJOY!
