Coconut Almond Butter Cookies

These are perfect for a post-workout snack or just to enjoy a healthy treat with a cup of coffee. Also a great source of protein and very quick to bake.


  • 1 cup crunchy almond butter

  • 1 large egg (beaten)

  • 3-4 tbsp maple syrup

  • 1 cup shredded coconut or coconut flour

  • 1/2 tsp vanilla extract

  • 8-10 pecans (I used candied pecans for more flavor)


  1. Preheat oven to 350

  2. Line a cookie baking pan with parchment paper

  3. Mix all the ingredients in a bowl to a thick batter consistency

  4. Use an ice cream scoop to place the cookie dough into small balls on the baking tray

  5. Flatten and shape the cookies with your fingers or a flat spatula

  6. Place in the oven and bake for 10-15 or a few more minutes until golden brown
