Coconut Almond Butter Cookies

These are perfect for a post-workout snack or just to enjoy a healthy treat with a cup of coffee. Also a great source of protein and very quick to bake.

Ingredients
- 1 cup crunchy almond butter 
- 1 large egg (beaten) 
- 3-4 tbsp maple syrup 
- 1 cup shredded coconut or coconut flour 
- 1/2 tsp vanilla extract 
- 8-10 pecans (I used candied pecans for more flavor) 

Method
- Preheat oven to 350 
- Line a cookie baking pan with parchment paper 
- Mix all the ingredients in a bowl to a thick batter consistency 
- Use an ice cream scoop to place the cookie dough into small balls on the baking tray 
- Flatten and shape the cookies with your fingers or a flat spatula 
- Place in the oven and bake for 10-15 or a few more minutes until golden brown
