Hearty Italian Soup


A bowl of some good soup is always so comforting. Its been a little chilly here for the past few days, and this recipe is just perfect for days like that. The best part is that you don’t need to spend a long time in the kitchen to make this. Just throw a few ingredients in a pot and you are done!
Here’s what you’ll need

  • 1 large potato chopped to bite size pieces

  • 2-3 ribs of celery chopped to bite size pieces

  • 3-4 medium carrots chopped to bite size pieces

  • 2 chicken sausages of choice chopped to bite size pieces

  • 1/2 tbsp Italian seasoning

  • 1/2 tbsp garlic powder

  • 1 tbsp olive oil

  • 1-2 cups vegetable or chicken broth (depending on the consistency of the soup you like)

  • Salt and pepper to taste


To make the soup..

  1. Heat olive oil in a large pot on high to medium heat

  2. Add sausage to the pot and sauté for a minute

  3. Add carrots, potatoes and seasoning, then mix well

  4. Add broth and stir, then bring to boil on medium to high heat

  5. Cover the pot, and let the soup cook for 10 minutes on medium to low heat

  6. Add celery and cook for another 5 minutes on low heat

  7. Once the veggies have reached your desired consistency, you can turn the heat off

  8. Stir well before serving & enjoy

I like to add the celery a bit later so that it does not lose that crunch. You can do the same with carrots too. This soup tastes really good on its own, or with a piece of toasted sourdough bread.
