Mahi Mahi Fish Curry

Ingredients
- 4 Mahi mahi fish filets cut into bite size pieces 
- 6 medium tomatoes puréed 
- 4 cloves of garlic crushed 
- 1 cup Greek yogurt whipped 
- 2 tbsp whole coriander seeds (grind fresh in a coffee grinder) 
- 1/2 tsp turmeric powder 
- 1 tsp Garam masala 
- 1/2 tsp cayenne pepper 
- salt to taste 
- 3 tbsp olive oil 
- Fresh coriander leaves 
Method
- Marinade the fish pieces in Greek yogurt and set aside. 
- Heat the olive oil in a pot. 
- add the pureed tomatoes and crushed garlic. 
- Add the ground coriander seeds, cayenn pepper, turmeric, garam masala & salt & mix well. 
- Stir every 30 seconds for 5 minutes until you see some oil on the edges of the mixture. 
- Add in the marinated fish and mix well. Make sure to quote all pieces with the curry. 
- Turn heat to medium low and cover the pot. Let the fish cook for 5 minutes. 
- check to see if fish is done after 5 minutes and gently mix one more time then turn the heat off. 
- Serve in a dish & sprinkle with freshly chopped coriander leaves.
