
Ingredients
4 Mahi mahi fish filets cut into bite size pieces
6 medium tomatoes puréed
4 cloves of garlic crushed
1 cup Greek yogurt whipped
2 tbsp whole coriander seeds (grind fresh in a coffee grinder)
1/2 tsp turmeric powder
1 tsp Garam masala
1/2 tsp cayenne pepper
salt to taste
3 tbsp olive oil
Fresh coriander leaves
Method
Marinade the fish pieces in Greek yogurt and set aside.
Heat the olive oil in a pot.
add the pureed tomatoes and crushed garlic.
Add the ground coriander seeds, cayenn pepper, turmeric, garam masala & salt & mix well.
Stir every 30 seconds for 5 minutes until you see some oil on the edges of the mixture.
Add in the marinated fish and mix well. Make sure to quote all pieces with the curry.
Turn heat to medium low and cover the pot. Let the fish cook for 5 minutes.
check to see if fish is done after 5 minutes and gently mix one more time then turn the heat off.
Serve in a dish & sprinkle with freshly chopped coriander leaves.
