Mini Pizza Pies

This is a quick, healthy, delicious and easy peasy recipe, perfect for dinner or a gourmet snack!

You will need four simple ingredients to make these beauties.

  1. Polenta

  2. Sundried tomatoes

  3. Goat cheese

  4. Fresh basil

Slice the polenta into 1 to 1/2 inch rounds and grill each side brushed with some olive oil for about 1-2 minutes, then set aside.

Garnish each polenta round with some sundried tomato pieces, goat cheese crumbles and fresh basil leaves. That's it! they are ready to enjoy!

Notice I did not provide any measurements for the ingredients. Season them with as much as you like.

You can get as creative as you want with polenta. Polenta is basically mashed italian cornmeal. It's somewhat bland but when married with flavors, it is sure to please your taste buds.
